Pasta with green beans

  • 200
    uncooked spinach ribbon noodles or macaroni
  • 225
    baby green beans, topped and tailed
  • 150
    olive oil
  • 45
    red wine or grape vinegar
  • 15
    wholegrain mustard
  • 400
    whole tomatoes, drained and cut into smaller pieces
  • 2
    cloves garlic, crushed
  • salt and black pepper to taste
  • thin slices mozzarella or Parmesan cheese


Cook the pasta in rapidly boiling salted water until tender. Drain. Cook the green beans in a little water until just tender but still crisp. Drain and return to the saucepan. Add the pasta. (OR cook the vegetables with the pasta, adding them when the pasta is half-cooked.) Mix the remaining ingredients, except the cheese, and add to the pasta mixture. Mix and turn everything into a bowl. Garnish with slices of cheese. Serves 4.
