Pasta with creamy avocado sauce

Ingredients (11)

SAUCE
30.00 ml butter
3.00 spring onion — chopped
5.00 ml orange — zest only
5.00 ml lemon — zest only
2.00 ml coriander — ground
190.00 ml cream
45.00 ml yoghurt — plain
sea salt and freshly ground black pepper
2.00 avocado
300.00 g pasta — tagliatelle
8.00 bacon — lean back rashers

Method:

Melt the butter and sauté the spring onions until just tender. Add the rind and coriander and remove from the stove. Mix the cream and yoghurt and season to taste. Add the diced avocado and stir in the spring onion mixture. Cook the pasta in rapidly boiling salted water until just done but still al dente. Grill the bacon until crisp and chop coarsely. Mix the avocado sauce with the hot pasta, spoon into hot serving bowls and scatter the chopped bacon on top. Season with extra black pepper and serve with a bowl of chilli sauce.
