Pasta with butternut and walnuts

    olive oil
  • 1
    onion, chopped
  • 500
    butternut, cut into small cubes
  • 15
    Moroccan seasoning
  • 300
  • 100
    walnuts, toasted and roughly chopped
  • 60
    freshly chopped coriander or parsley


20 minutes
Heat half the oil in a saucepan and fry the onion until soft.
Add the butternut and cook for one minute.
Add the Moroccan spice and cook for a further 30 seconds.
Add 150 ml water, cover and simmer over low heat until tender (about 10 minutes). Season to taste.
Meanwhile cook the pasta according to the packet instructions and drain. Toss everything together.
Drizzle with the remaining oil and serve with grated Parmesan or cheddar cheese.
VARIATION: For a non-vegetarian option, add crispy bacon pieces to this pasta. Top with crumbled feta or blue cheese.
