Pasta, spinach and tomatoes

  • 3
    cloves garlic, crushed
  • 150
    hard margarine
  • 10
    dried sweet basil
  • 4
    medium tomatoes, cut into bite-sized pieces
  • 2
    small bunches spinach, trimmed and sliced
  • 500
    pasta shells
  • grated Cheddar cheese, to serve

Mix garlic, 100 g margarine, basil and tomatoes. Steam spinach until soft, then drain. Heat remaining margarine in a frying pan and sauté spinach. Add to the garlic mixture. Cook pasta according to packet instructions and drain. Toss with other ingredients and spoon into a serving dish. Leave to stand in the warming drawer of an oven or on a hot tray for 30 minutes to allow flavours to blend. Serve with cheese. Serves 4.
