Ingredients (12)

250.00 g pasta — fusilli
white sauce
1.00 eggs — lightly beaten
15.00 ml oil
1.00 onion — chopped
410.00 g tomatoes
30.00 ml tomato paste
2.00 ml sugar
10.00 ml garlic and herb seasoning
2.00 aubergine — peeled, thinly sliced
15.00 olives — black, pitted and quartered
500.00 ml mozzarella cheese — grated
parmesan cheese

Method:

Combine the fusilli, white sauce and egg in a bowl. Mix well and press firmly into greased 28 cm diameter pizza dish. Sauté onion in oil until soft, add tomatoes, tomato paste, sugar and seasoning. Mix well and simmer for 10 minutes or until thick. Spread tomato mixture evenly over pasta base and top with aubergines, olives and cheeses. Bake at 200 ºC for 20 minutes or until browned.
Serves 4.
