Pasta and fresh tomato sauce with basil

    olive oil
  • 1
    clove garlic, crushed
  • 30
    minced onion
  • 12
    plum (Roma) tomatoes, peeled, seeded, and coarsely chopped
  • salt and milled pepper
  • 250
    fresh basil leaves, torn into thin strips
  • pasta shapes of your choice, cooked until al dente


Heat oil in a heavy-based saucepan over medium heat. Sauté garlic until golden, and discard it. Sauté onion in pan until translucent, 3 to 4 minutes. Add tomatoes and season to taste. Cook over high heat for 3 minutes. Stir in basil and cook for another minute. Serve with pasta.
