Ingredients (13)

250.00 g flour — cake
5.00 ml Baking powder
250.00 g butter
250.00 g castor sugar
5.00 ml vanilla — essence
4.00 eggs — large
10.00 ml orange — zest only
15.00 ml orange juice
2.00 mango — chopped
200.00 g icing sugar
2.00 granadillas — pulp
5.00 ml lemon juice
orange — candied peel, to garnish

Method:

Sift together flour and baking powder.
Beat butter and sugar together until light. Beat in the vanilla essence. Add the eggs, one at a time, beating well after each addition.
Fold in orange zest, orange juice and flour.
Fold in chopped mango and spoon into a 1,5 litre ring cake tin.
Bake in preheated 180 °C oven for one hour, or until a skewer inserted comes out clean.
Remove from oven and cool for 10 minutes, then turn out onto a wire rack.
ICING: Mix together icing sugar and granadilla pulp. Add lemon juice and mix well. Spoon over cake once cake is cool.
Sprinkle with candied orange peel to garnish.
