Ingredients (9)

1.00 Litres water
2.00 kg sugar
2.00 pineapple — tinned chunks
2.00 Litres orange juice
750.00 ml lemon juice
4.00 oranges — whole, rind and pith removed,cut
4.00 Litres water — cold
ice — cubes
fresh mint — to garnish

Method:

Heat the water and sugar in a saucepan, stirring continuously until the mixture comes to the boil. Boil for 10 minutes and cool. Add the pineapple chunks, including the syrup, orange and lemon juice, orange segments and water. Mix. Chill until needed and serve with ice cubes. Pour into pretty glasses and decorate each with a sprig of fresh mint if desired.
Makes about 9 litres.
