MEAT
10.00 pork — schnitzels
salt
freshly ground black pepper
1.00 eggs
25.00 ml milk
120.00 g breadcrumbs — dried
50.00 ml parmesan cheese
oil — for frying
60.00 g cheddar cheese — sliced
SAUCE
15.00 ml oil
1.00 onion — small, sliced
2.00 garlic — cloves, crushed
410.00 g tinned tomatoes — whole
salt
freshly ground black pepper
oregano
sugar
25.00 ml fresh parsley — chopped

Method:

Preheat the oven to 180 ºC (350 ºF). Season the pork lightly with salt and pepper. Blend the egg and milk together. Combine the breadcrumbs and Parmesan cheese. Dip the meat in the egg mixture and then in the crumb mixture. Heat sufficient oil in a pan and fry the meat slices until just cooked on the inside. Do not overcook or the meat will be dry. Drain on kitchen towelling and arrange on a serving platter. Arrange slices of cheese on top and place in the oven until the cheese has just melted. Serve with sauce: Heat the oil in a pan and sauté the onion and garlic until soft. Add the tomatoes and simmer until the mixture forms a thick sauce. Season to taste with salt, pepper, origanum and sugar. Finally, add the chopped parsley.
Serves 6-8.
