quantity basic bread dough mixture, made with brown bread flour
20.00 ml poppy seeds
20.00 ml butter — or margerine
1.00 onion — finely chopped
1.00 garlic — cloves, crushed
50.00 ml parmesan cheese

Method:

Preheat the oven to 200 ºC. Prepare the basic dough recipe as described until the dough has risen for the first time. Add the poppy seeds and punch down the dough. Roll into a rectangle about 1 cm thick. Sauté the onion and garlic in the hot butter until soft. Cool and add the cheese. Spread the mixture over the entire rectangle. Roll up the dough lengthwise and shape into a ring. Press the two ends securely together. Place on a greased baking sheet, cover with clingwrap and leave to rise until doubled in buck. Remove the clingwrap, brush with whisked egg and sprinkle with extra Parmesan cheese and poppy seeds. Make a few shallow diagonal cuts across the bread and bake for 15 minutes. Reduce the heat to 180 ºC (350 ºF) and bake for a further 20-25 minutes or until done.
Makes a medium-sized loaf.
