Parmesan air puffs

  • 6
    egg whites
  • 250
    (1 cup) Parmesan cheese, grated finely
  • 1000
    oil, to deep-fry


Whisk the egg whites until stiff. Fold in the cheese. Drop spoonfuls of the mixture into hot oil. Cook on both sides until puffed up and golden. Serve straight away on their own or with a sweet chutney or preserve.
