Pancake rotis

1. Make up pancake mix with water and oil, following the instructions on the packet. Leave to stand for at least 10 minutes. Make pancakes and set aside. 2. FILLING: Brown mince a little at a time in a mixture of oil and butter. Remove and set aside. 3. Sauté onion until transparent. Add garlic, ginger, turmeric and chilli. Cook for 1 to 2 minutes. 4. Add tomato, beef stock and mince. Cook for 10 minutes. 5. Add peas and garam masala. Season and cook until meat and peas are tender. 6. Spoon mince mixture on to pancakes and roll up to completely enclose the filling. Serve hot garnished with fresh coriander.
