Pan omelette with ribbon noodles

    clove garlic, crushed

    small onion, finely chopped
  • 1
    red pepper, seeded and diced

    cooked deboned chicken, mutton or beef, diced
  • 150
    thin ribbon noodles, cooked
  • cheese shavings for sprinkling on top (optional)


Beat the eggs, cayenne pepper and paprika together and set aside. In a pan with oven proof handles, sauté the garlic, onion and pepper in heated oil until tender. Add the meat and noodles and mix. Pour over the egg mixture and reduce the heat. Heat until the mixture has set at the bottom, remove from the heat and place under the heated oven grill until the omelette is done and just set on top. Cool slightly before carefully turning out. Sprinkle with cheese. Slice and serve hot with a fresh salad and wholewheat bread rolls. Serves 4 as a light meal.
