Pan omelette

  • 500
    potatoes, peeled and diced
  • 1
    small onion, coarsely chopped
  • half small green pepper, diced
  • 340
    bully beef, diced
  • 4
  • 5
    mustard powder
  • 5
  • salt and pepper to taste
  • Cheddar cheese for sprinkling (optional)


Boil the diced potato in water till soft. Drain. In a large pan, sauté the onion and green pepper in a little heated oil till soft. Add the potatoes and bully beef and stir-fry for about 2 minutes. Spread the mixture evenly in the pan. Beat the eggs and seasonings together and pour over the mixture in the pan. Sprinkle with grated cheese if using. Cover, reduce heat and cook till the egg mixture has set. Lift the sides of the omelette to allow any raw egg to run underneath and cook. Serve with a salad. Serves 3-4.
