Ingredients (12)

SAUCE
30.00 ml fresh chillies — 573
2.00 red pepper — finely chopped
1.00 onion — small, chopped
30.00 ml water
30.00 ml cream — thick
salt and freshly ground black pepper — to taste
600.00 g hake — frozen fillets
flour — cake, seasoned
45.00 ml butter
45.00 ml fresh chillies — 573
65.00 ml lemon juice — fresh
fresh dill — to garnish

Method:

Prepare the sauce: Heat the oil in a fairly small saucepan and sauté the red peppers and onion for 1 minute. Add the water, cover and simmer until tender. Remove from the pan and process the pepper mixture and cream to form a smooth purée. Season to taste with salt and pepper. Reheat gently just before serving.
Season the fish to taste with salt and pepper and dredge with the seasoned cake flour. Heat the butter and oil in a fairly large pan and fry the fish over medium heat until golden brown on both sides. Baste with lemon juice and serve with the warmed red pepper sauce. Garnish with sprigs of dill if desired.
Serves 4.
