Ingredients (4)

50.00 ml butter
4.00 fish — linefish fillet
20.00 ml lemon juice
sea salt and freshly ground black pepper

Method:

Heat butter until hot in a large pan. Fry the fish on one side until golden brown, turn carefully and fry the other side until golden brown. Turn the heat down slightly while frying the fish and cover with a lid to steam it. This prevents the fish from drying out. The fish is ready when it flakes easily. Season with lemon juice, salt and pepper to taste. Serve with vegetables and a dollop of orange mayonnaise.
