Pan-fried chicken and sweet chilli mayo

  • Olive oil for frying
  • 2
    skinned chicken breasts
  • 30
    good quality mayonnaise
  • 30
    plain yoghurt
  • 15
    sweet chilli sauce
  • 1
    large Italian roll (panini)
  • 1
  • 1
    small red onion
  • Lettuce leaves


Heat oil in a pan until almost smoking, add chicken and fry on both sides until just cooked through, about 8 minutes.

Meanwhile mix mayonnaise, yoghurt and chilli sauce together and adjust flavours to your taste.

Slice open roll and spread with mayo mixture.

Add tomato, onion and lettuce.

Add hot pan-fried chicken breast and enjoy!
