Ingredients (9)

400.00 g puff pastry — defrosted
2.00 eggs — whites only, lightly beaten
castor sugar
FILLING
250.00 ml cream — fresh, chilled
30.00 ml jam — strawberry
50.00 g strawberries — quartered
DECORATION:
200.00 g strawberries — for decoration, washed
strawberry leaves — use for decoration (optional)
icing sugar — to garnish

Method:

Preheat the oven to 220 ºC (425 ºF). Grease two baking trays.
Step 1: Roll out the pastry on a floured marble surface to form a 50 cm long rectangle. Using a sharp knife, make a mark along the centre of the dough, but do not cut through it.
Step 2: Brush the pastry with the beaten egg white and sprinkle with 30 ml castor sugar.
Step 3: Fold the two long sides of the rectangle inwards to meet at the centre line. Press the pastry with your fingertips until flat. Brush with egg white once more and sprinkle with 15 ml castor sugar.
Step 4: Again fold the long sides of the rectangle inwards to meet at the centre line and press until flat. Brush with egg white once more and sprinkle with 15 ml castor sugar. Repeat the folding process once more and press the two folded sides firmly together at the centre line. Trim the edges and wrap in plastic wrap. Chill for at least 10 minutes.
Step 5: Cut the dough into 7 mm wide slices and arrange on baking trays, leaving enough room between the slices to allow them to spread.
Step 6: Shape each slice with your fingertips so that it is round at the bottom with two neat curls at the top, so that it looks more or less like heart shape. Sprinkle each slice with a little castor sugar and bake for 8 to 10 minutes or until golden brown.
Turn over, sprinkle with more castor sugar and bake for another 4 minutes.
Step 7: Cool slightly on the baking tray before transferring the fans to a wire rack to cool down.
Whip the cream until stiff and add the strawberry jam and strawberry quarters. Just before serving, spoon the filling on half of the fans and cover these with the remaining fans.
Dust with icing sugar if desired and serve with fresh strawberries and the remaining strawberry cream.
