  • 400
    frozen flaky or puff pastry, defrosted

    egg yolk

    cold milk


Sugar a marble work surface and roll flaky pastry out to form a 35 cm x 25 cm rectangle, 3 mm thick. Sprinkle pastry with sugar. Fold each long side to meet at the centre, leaving a 2 mm gap, and sprinkle with sugar. Repeat process and dust again with sugar. Fold one folded section over the other (lengthways) to make a 3 cm wide band. Cut into 1,5 cm thick slices. Moisten a baking sheet with cold water. Place slices on baking sheet, 3 cm apart to allow for spreading during baking. Brush with egg yolk mixed with milk and sprinkle with sugar. Bake at 240 ºC for 8 minutes, turn slices and dust with sugar again. Bake until golden brown. TOTAL KILOJOULE COUNT: 7 195 kJ (1 720 Cal). A portion: 360 kJ (85 Cal).
