375.00 g linguine
1.00 garlic — cloves, crushed
1.00 red pepper — seeded and diced
30.00 ml fresh chillies — 573
60.00 ml fresh Italian parsley — chopped
2.00 tuna — tinned in brine
1.00 lemon — zest and juice
60.00 g parmesan cheese — grated
25.00 g butter — diced
100.00 g plum tomatoes — quartered
0.00 sea salt and freshly ground black pepper
0.00 rocket
0.00 lemon — cut into wedges

Method:

Cook the linguini pasta according to the packet instructions, drain well and keep warm.
Stir-fry the crushed garlic and diced red pepper in the olive oil over moderate heat for three to four minutes.
Add the chopped parsley and tuna and heat for another two to three minutes.
Add the drained pasta, along with the lemon juice, grated Parmesan cheese and butter.
Mix well, allowing the butter to melt.
Add the tomatoes and season well with salt and pepper.
Serve immediately with rocket and lemon wedges.
