Oven-roasted tomatoes with goats? milk cheese and basil

  • 4
    large ripe tomatoes
  • 90
    chèvre (goats' milk cheese)
  • freshly ground black pepper to taste
  • 45
    chopped fresh basil

Preheat the oven grill.
Slice each tomato into three to four thick slices and arrange in a single layer in a shallow, ovenproof dish.
Slice the cheese thinly and place a slice on top of each tomato slice.
Season with pepper to taste and scatter the basil on top.
Grill for two to three minutes or until the cheese has just melted. Serve immediately.

Variation: Use low-fat mozzarella or Tussers cheese instead of goats? milk cheese.
