Oven-roasted mealies and waterblommetjies

  • 500
    waterblommetjies, stalks intact
  • 2
    young mealies
  • 1
    each red and yellow peppers, seeded and cut into strips
  • freshly ground black pepper and salt
  • 1
    lemon, juice
  • olive oil


Rinse the waterblommetjies in salted water and remove the large outer leaves, then cook in boiling water for 3 minutes and drain.
Cook the mealies in boiling water until nearly done and cut into thick segments.
Arrange the vegetables in a single layer in an oven pan and season with black pepper and salt.
Add the lemon juice and drizzle with olive oil.
Bake at 200 °C for about 30 minutes or until the vegetables are done but still slightly crisp.
