Oven-roasted chicken with rosemary, lemon and garlic

  • 1 free-range chicken, as is or spatchcocked
  • juice and rind of 1 lemon
  • 12 garlic cloves, crushed
  • 2 handfuls of fresh rosemary
  • 75 ml extra virgin olive oil
  • salt
  • freshly ground black pepper


Preheat oven to 180 °C.
Place the chicken in an ovenproof dish.
Mix lemon juice, lemon rind, garlic, rosemary, olive oil, salt and pepper, and rub all over the chicken.
Roast in the oven for about 1 hour or until golden brown.
Scoop over the juices occasionally while cooking.
