Ingredients (6)

140.00 g sugar
500.00 ml water
15.00 ml lemon juice
5.00 ml lemon — zest only
4.00 bananas — sliced
20.00 ml custard powder

Method:

Blend the sugar, water, lemon juice and rind a saucepan. Heat slowly, stirring continuously until the sugar has dissolved. Add the banana slices and heat until they are soft but still retain their shape. Blend the custard powder with a little water and add to the banana mixture. Heat until the mixture comes the boil and thickens. Stir continuously. If you prefer a slightly thicker dessert, simply add more custard powder. Serve hot or cold with a scoop of plain yoghurt.
Serves 4-6.
