Ingredients (12)

SALSA
150.00 g strawberries — chopped
10.00 ml castor sugar
10.00 ml vinegar — balsamic
4.00 tomatoes — peeled, deseeded and chopped
30.00 ml fresh mint — chopped
4.00 spring onions — sliced

30.00 ml sunflower oil
2.00 garlic — cloves, crushed
30.00 ml lemon juice
5.00 ml black pepper — freshly ground
4.00 ostrich — steak

Method:

SALSA
Place the berries, sugar and vinegar in a saucepan. Heat over gentle heat for 5 minutes. Cool, then mix in the tomatoes, mint leaves and spring onions. Set aside for at least 30 minutes.
STEAKS
Mix together the oil, garlic, lemon juice and black pepper in a dish. Add the ostrich steaks and coat well in the mixture. Marinate for 10-15 minutes.
Cook the steaks over medium to hot coals on the barbecue/braai for about 5 minutes on each side depending on how thick the steaks are. Serve immediately, accompanied by the berry salsa. Serves 4.
