Ingredients (11)

1.00 ostrich — steak
2.00 garlic — cloves, crushed
100.00 ml soy sauce
80.00 ml fresh chillies — 573
250.00 g halloumi cheese — goat's milk variety
1.00 lettuce
1.00 onion — sliced
1.00 red pepper — sliced
Dressing: lemon juice
1.00 fresh ginger — grated
15.00 ml wholegrain mustard
50.00 ml fresh chillies — 573

Method:

1. Marinate the steak for about an hour in a mixture of garlic, soya sauce and 50ml olive oil.
2. Preheat a griddle pan over a high heat until hot. Grill each steak for two to five
minutes on each side until cooked to your liking. Remove the meat from the pan and leave it to rest for 10 minutes before slicing into thin strips.
3. Heat the remaining olive oil in a non-stick frying pan and fry the slices of cheese until brown on both sides.
4. Arrange the lettuce, onion rings and red pepper on a platter. Add the meat and the cheese just before serving.
5. Dressing
Mix all the ingredients for the dressing and drizzle over the salad. Serve immediately.
