Ostrich meat loaf with sweet-chilli sauce

Ingredients (7)

500.00 g ostrich mince
1.00 onion — small, chopped
2.00 bread slices — crumbled
2.00 eggs — beaten
125.00 ml sweet chilli sauce
20.00 ml tomato paste
20.00 g fresh parsley — chopped

Method:

Mix the mince and onion, then add the breadcrumbs and the eggs, and mix until well combined. Add 50ml of the sweet-chilli sauce, the tomato paste and parsley and mix well. Season to taste.

Spray a loaf tin with non-stick spray and spoon the mince into the tin. Bake for 25 minutes in a preheated oven. Slice the meat loaf into 1,5cm slices and serve on a bed of couscous with extra chilli sauce and a fresh green salad.
