Ingredients (8)

750.00 g veal — shank
50.00 ml flour
45.00 ml fresh chillies — 573
500.00 ml wine — dry white
4.00 garlic — cloves, crushed
70.00 g tomato paste
1.00 lemon — zest and juice
50.00 ml fresh parsley — chopped

Method:

Dust the veal with the flour.
Heat the oil in a saucepan and brown the veal.
Add the wine, 2 cloves of garlic, tomato paste and lemon juice.
Bring to the boil, then reduce the heat, cover and simmer for about 1 1/2 hours or until tender.
Mix the parsley, remaining garlic and lemon rind together (this is called Gremalata). Sprinkle over the ossobuco once served.
