Ingredients (11)

1.00 onion — finely chopped
125.00 ml fresh oregano
fresh chillies — 573
500.00 ml aubergine — peeled, diced
500.00 ml mushrooms — sliced
250.00 ml green pepper — finely chopped
125.00 ml celery stalks — thinly sliced
500.00 ml cabbage — finely sliced
sea salt
freshly ground black pepper
1.00 lemon — juice only

Method:

Brown the onion and the origanum in a little olive oil. Soak brinjal in salt water for 10 minutes and then drain. Add the brinjal and brown lightly, then add the mushrooms. Add all the other ingredients and lastly the lemon juice. Stir lightly until tender, and serve piping hot with brown rice or crusty brown bread and a sprinkling of finely chopped parsley mixed with a little origanum.
