Oriental salad dressing

  • 1
    packet salad leaves or a salad made with 500 g blanched broccoli, green beans and baby spinach
  • 30
    sesame seeds
  • 45
    sunflower oil
  • 1
    x 2 cm piece fresh ginger, peeled and grated
  • 1
    garlic clove
  • 30
    rice wine
  • salt and pepper
  • sugar


The sesame seeds in this dressing give it an unusual flavour. Use it on a combination of lettuce leaves or a salad made with blanched broccoli, green beans and baby spinach.

In a hot dry pan toast the sesame seeds until they just begin to brown.
Add the sunflower oil and, using the back of a spoon, crush the fresh ginger and garlic clove to form a paste.
Stir in the sesame seed and oil mixture and the rice wine.
Season with salt and pepper and a pinch of sugar.
