Ingredients (9)

250.00 ml rice — white or brown
45.00 ml sunflower oil
2.00 celery sticks — thinly sliced
500.00 ml chicken — turkey or pork, diced
375.00 ml peas — frozen
1.00 carrots — peeled and grated
15.00 ml soy sauce
2.00 eggs — lightly beaten
2.00 spring onions — finely chopped

Method:

Cook the rice in boiling, salted water, drain and set aside.
Heat the oil in a deep frying pan over a moderate heat for 1 minute.
Add the celery and stir-fry for 2 minutes.
Mix in the rice, chicken, peas, carrot and soya sauce.
Cook, uncovered, stirring frequently, for 5 to 7 minutes or until heated through.
Stir in the eggs and cook, stirring constantly, just until the eggs are set.
Sprinkle with spring onions.
