Ingredients (11)

MARINADE
15.00 ml lemon juice
1.00 garlic — cloves, crushed
65.00 ml fresh ginger — grated
30.00 ml honey
250.00 ml soy sauce
KEBABS
1.00 onion — medium, quartered
1.00 green pepper — chopped
1.00 red pepper — chopped
375.00 ml button mushrooms
400.00 g chicken breast fillets — skinned, deboned and cubed
400.00 g pineapple — tinned rings, chopped

Method:

Combine all the marinade ingredients and pour into a flat container.
Soak 8 wooden skewers in water before use to prevent burning.
Thread onion, green and red peppers, mushrooms, chicken and pineapple pieces alternately onto skewers, then place the kebabs in marinade and refrigerate overnight.
Cook the kebabs under a moderate grill or on the barbecue, turning from time to time to prevent burning.
Serve with rice or baked potatoes and salad.
