Orange vanilla cake

    free range egg yolks
  • 1
    whole free range egg
  • 200
  • 250
    butter, melted and cooled
  • 1
    zest of orange
  • 60
    cake flour, sifted
  • 60
    cornflour, sifted icing sugar, sifted, to dust


Preheat the oven to 180°C.
Beat eggs and sugar for 20 minutes until thick and pale. Add to cooled butter, beating the mixture continually. Add orange zest.
Add flour and cornflour and carefully fold into the mixture.
Once the mixture is folded together, pour it into a medium-sized, greased loaf pan.
Wrap the pan with tinfoil. Bake for 1 hour.
Remove from oven and cover the cake to keep the moisture in until cool.
Sprinkle icing sugar over it and enjoy!
