Ingredients (15)

2.00 large oranges — peeled and sliced
125.00 g raisins
150.00 g dates — pitted, chopped
100.00 g pecan nuts — chopped
50.00 g butter
200.00 ml golden syrup
TOPPING
150.00 g flour — cake
50.00 g cornflour
3.00 ml salt
15.00 ml Baking powder
75.00 g butter
75.00 g brown sugar
1.00 orange — zest only
2.00 eggs — large
250.00 ml milk

Method:

1. Grease a 33 x 21 cm ovenproof dish. Cover bottom of dish with orange slices. Sprinkle evenly with raisins, dates and nuts. Chop butter into small pieces and dot evenly over fruit layer. Pour syrup over fruit.
2. TOPPING: Sift flour, cornflour, salt and baking powder together. Beat butter, sugar and orange rind together until light.
3. Add eggs one at a time and mix well after each addition. Add flour mixture alternately with milk and mix until smooth.
4. Pour evenly over fruit base and bake in preheated 180 ºC oven for 40 minutes until golden brown. Serve with hot custard.
