Orange shake

    oranges, freshly squeezed juice
  • 750
  • 2
    lemons, grated rind
  • vanilla ice cream to serve
  • chilled lemonade to serve

1. Place unstrained orange juice in a saucepan. Add sugar and lemon rind. Heat over medium heat, stirring until sugar has dissolved. 2 Bring to the boil, then reduce heat and simmer, uncovered, until liquid has reduced and thickened slightly. Cool completely. Store, covered, in a sterilised glass jar in the refrigerator until ready to use. 3 TO SERVE: Spoon two to three scoops of vanilla ice cream into each glass. Pour 25 ml syrup over the ice cream and top up with lemonade. Mix and enjoy! Makes about 600 ml syrup.
