Ingredients (10)

0.00 flour — for dusting
1.50 kg chicken — jointed
15.00 ml butter
15.00 ml sunflower oil
500.00 ml orange juice — freshly squeezed
25.00 ml orange — zest only
1.00 onion — medium, finely chopped
2.00 garlic — cloves, crushed
15.00 ml cornflour
125.00 ml cream

Method:

Season the flour with salt and white pepper.
Dust chicken pieces with flour.
Heat the oil and butter in a saucepan and then add the chicken.
Sauté over a medium heat until the chicken pieces have browned.
Transfer to a casserole dish.
Pour over the orange juice and sprinkle over the zest, onion and garlic.
Cover tightly and cook in a preheated 190 °C oven for 60 to 90 minutes, until chicken is cooked and tender.
Transfer chicken to a heatproof serving platter.
Brown under a preheated grill (not too close, otherwise it will catch quickly).
Decant sauce into a small saucepan.
Mix cornflour with a little cold water and stir into the sauce.
Stir over medium heat until slightly thickened.
Add cream and heat through.
Do not allow the sauce to boil because it will separate.
Serve sauce separately or pour over the chicken when serving.
Decorate the serving platter with slices of fresh orange and lemon leaves.
Serve with rice and vegetables.
