Ingredients (14)

PUDDING
375.00 ml marmalade — or kumquat preserve
5.00 eggs — extra-large
250.00 ml sugar
250.00 ml milk
125.00 ml butter
1.00 orange — zest only
500.00 ml flour — cake
10.00 ml Baking powder
5.00 ml salt
SAUCE
500.00 ml sugar
250.00 ml water
30.00 ml butter
250.00 ml orange juice
5.00 ml orange — zest only

Method:

Preheat the oven to 180 ºC. Grease an oven pan with butter or margarine.
Dot the bottom of the dish with knobs of marmalade. Whisk the eggs and sugar together. Heat the milk, butter and rind together until the butter has melted. Sift the remaining ingredients together and fold into the egg mixture, alternating with the milk. Spoon into the dish and bake for 40 minutes or until a testing skewer comes out dean when inserted into the centre of the pudding.
Meanwhile heat the sugar, water and butter until the sugar has dissolved. Boil for 5 minutes and add the orange juice and rind. Make a few holes in the hot pudding and pour over the sauce.
Makes a large pudding.
