Orange, olive and herb salad

  • 3
    oranges, segmented
  • 1
    red onion, sliced into moons
  • 8
    olives, pitted and halved
  • Italian parsley, basil, rocket or mint leaves (or a mixture)
  • seasoning to taste
  • olive oil
  • 4
    fish portions, grilled (used sardines, tuna or yellowtail)


Toss together the oranges, red onion, olives, Italian parsley, basil, rocket or mint leaves.
Season well, add a splash of olive oil and serve on grilled fish.
