Ingredients (8)

600.00 ml orange juice — fresh
40.00 g butter
25.00 g flour
60.00 ml wholegrain mustard
5.00 ml sugar
0.00 salt
0.00 fresh tarragon — chopped
6.00 pork — kassler chops or joint

Method:

SAUCE:
Heat orange juice and set aside. Melt the butter over gentle heat in another pan, mix in the flour and continue to cook gently for 2 to 3 minutes, stirring all the time to prevent lumps from forming.

Remove from the heat and add the warm orange juice, stirring continuously. Return to the heat and bring the sauce to the boil, stirring all the time. Simmer for 5 minutes, stirring from time to time.
Remove sauce from the heat and stir in the mustard, sugar, salt and tarragon to taste.

Simmer the chops or joint in water for 10 to 15 minutes. Pour off the water. Pour sauce over chops and heat through. If using joint, brush sauce over and roast at 180 ºC for 45 minutes.
