Orange-glazed chicken breasts

  • 4
    chicken breast fillets
  • 2
    cloves garlic, peeled and sliced
  • 80
    apricot jam
  • 1
    orange, juice and zest
  • 30
    soya sauce


20 minutes
Make 3 cuts in each chicken breast and place a slice of garlic in each cut.
Combine the remaining ingredients in a shallow bowl.
Add chicken breasts, coat well and marinate for at least 30 minutes.
Place chicken on a baking tray and grill for about 5 minutes on each side, brushing regularly with marinade until the chicken is cooked and nicely browned.
Substitute the orange juice and zest with lemon for a different citrus flavour.
Add 30 ml grated ginger and 5 thinly sliced spring onions to the marinade.
