Ingredients (12)

250.00 g rice — basmati
60.00 ml sunflower oil
1.00 onion — large, finely sliced
30.00 ml sugar
turmeric — ground, pinch
5.00 ml cardamom — opened, seeds freshly ground
1.00 large orange — rind, blanched
1.00 orange juice
50.00 g almonds — flaked and toasted
50.00 g pistachio nuts, shelled — halved
50.00 ml sultanas
30.00 ml mixed citrus peel

Method:

Rinse rice in cold water several times and drain.
Heat oil in a heavy saucepan. Cook onion until transparent and soft. Add rice and stir well to coat grains with oil.
Add 250 ml water, sugar, seasoning to taste, turmeric, cardamom, orange rind and juice.
Bring to the boil and simmer, covered for 10 to 15 minutes until rice is tender. Fluff up with a fork and mix in nuts and fruit.
Cover and allow to stand for 10 minutes before serving.
