15.00 ml Sheridans gelatine
250.00 ml water — boiled
100.00 g sugar
250.00 ml orange juice
orange — grated rind
250.00 ml milk — low-fat
orange — sliced

Method:

Soak the gelatine in 30 ml cold water until spongy. Add the boiling water and stir until the gelatine has completely dissolved. Add the sugar and stir until dissolved. Add the juice and rind, blend and cool. Add the milk but do not stir. Pour into tall dessert glasses and place in the fridge to set. Decorate with orange slices and mint leaves.
Serves 4.
