Ingredients (15)

500.00 ml flour — cake
0.00 salt — just a pinch
10.00 ml Baking powder
250.00 g butter — or margerine
250.00 ml sugar
2.00 eggs — beaten
180.00 ml Buttermilk — or sour milk
3.00 ml Bicarbonate of soda
65.00 ml flour — cake, extra
10.00 ml orange — zest only
250.00 ml dates — chopped
250.00 ml walnuts — chopped
Syrup
125.00 ml castor sugar
5.00 ml orange — zest only
180.00 ml orange juice — fresh

Method:

1. Pre-heat oven to 180 degrees. Sift flour, salt and baking powder together. Cream butter or margarine with sugar in a large mixing bowl, add eggs and beat well.
2. Add dry ingredients alternately with butter or sour milk to which bicarbonate of
soda has been added.
3. Sprinkle extra flour onto nuts and dates and rub through. Add, with orange
rind, to cake mixture.
4. Spoon mixture into a well-greased tube tin and bake for 50-55 minutes, or
until done.
5. Make syrup by mixing castor sugar and orange juice together.
6. Add orange rind and stir to dissolve sugar. Place in the refrigerator.
7. Remove cake and pour over syrup. Return to oven for a further 5 minutes.
8. Remove from oven and allow to cool in tin before turning out.
