Ingredients (12)

750.00 ml breadcrumbs — white or brown
2.00 oranges — zest only
30.00 ml fresh sage — finely chopped
sea salt and freshly ground black pepper
25.00 g butter — for frying
1.00 onion — finely chopped
1.00 turkey liver — chopped
50.00 g walnuts — chopped
65.00 ml butter — melted
75.00 ml orange juice — fresh
45.00 ml brandy
1.00 eggs — beaten

Method:

1. In a large mixing bowl, using two forks or clean hands, mix breadcrumbs, orange rind, herbs and seasoning together. Set aside.
2. In a frying pan, heat the butter and sweat onion over a low heat until transparent. Increase the heat and add the liver; fry quickly until pink inside. Add walnuts and fry for 1 minute, remove and cool this mixture before adding to breadcrumb base.
3. Add melted butter, orange juice, brandy and enough egg to bind stuffing. Adjust seasoning.
