Orange Cake

    butter, at room temperature

    eggs, seperated

    cake flour
  • 1
    grated rind of orange
  • 80
    fresh orange juice
  • 7
    baking powder
  • ICING;
  • 300
    icing sugar, sifted
  • 150
    orange juice


Preheat the oven to 180 degrees. Grease a deep 20 cm cake tin and line the base with greased baking paper. Cream the sugar and butter until light and fluffy. Add the egg yolks, beating well. Beat the egg whites until stiff peaks begin to form and add to the butter mixture along with the flour, orange rind, juice and baking powder. Beat gently until well blended, the batter must form small air bubbles. Turn the batter into the prepared tin and bake for 1 hour or until done. Leave the cake to cool in the tin for 5 minutes before turning out onto a wire rack to cool completely.

ICING Whisk together the icing sugar and orange juice until well blended and drizzle over the cooled cake.
