Open sandwich with soft-boiled egg

  • 4
    slices white bread, toasted on one side
  • butter
  • 4
    soft-boiled eggs, shelled
  • 200
    prawns, drained
  • 200
    English cucumber, diced
  • 125
  • 25
    readymade sweet 'n sour mustard
  • paprika and Parmesan cheese for sprinkling


Turn on the grill and butter a baking sheet. Lightly butter the untoasted side of each slice of bread. Place on the buttered baking sheet, toasted side facing down. Place a soft-boiled egg in the centre of each slice of bread. Arrange a layer of prawns and then a layer of cucumber around each egg. Blend the mayonnaise and mustard and pour over each sandwich. Sprinkle with a little paprika and Parmesan cheese and grill until pale brown. Serve immediately.
