Ingredients (8)

4.00 bread — white slices, toasted on one side
butter
4.00 eggs — soft-boiled
200.00 g prawns — drained
200.00 g cucumber — English, diced
125.00 ml mayonnaise
25.00 ml mustard — sweet and sour
paprika — and parmesan cheese

Method:

Turn on the grill and butter a baking sheet.
Lightly butter the untoasted side of each slice of bread.
Place on the buttered baking sheet, toasted side facing down.
Place a soft-boiled egg in the centre of each slice of bread.
Arrange a layer of prawns and then a layer of cucumber around each egg.
Blend the mayonnaise and mustard and pour over each sandwich. Sprinkle with a little paprika and Parmesan cheese and grill until pale brown.
Serve immediately.
