Onion rings

  • vegetable oil for deep frying
  • 1
    medium onion, sliced thickly and separated into rings
  • cake flour for dusting
  • 250
    self-raising flour
  • pinch of salt
  • 250

Heat oil in a large pot.
Dust the onion rings with flour. In a bowl, combine the self-raising flour, salt and beer.
Whisk until smooth. Now work in batches: dip the rings in the batter, letting the excess drip off.
Add the rings to the oil and fry, turning occasionally, until crisp and golden. Remove and place on kitchen towel to drain.
Sprinkle with extra salt.
Best served immediately.
