Ingredients (9)

30.00 ml fresh chillies — 573
4.00 onions — large
1.00 fresh chillies — minced
10.00 ml mustard seeds — light
20.00 ml brown sugar
65.00 ml water
15.00 ml vinegar — red wine
10.00 ml vinegar — balsamic
0.00 salt and freshly ground black pepper

Method:

Heat oil in a large, heavy-based pan.
Add onions and chilli and sauté for about 2 minutes.
Add mustard seeds and cook until they begin to pop (don’t let them burn).
Add sugar and water and cook over moderately low heat until onions soften and sugar begins to caramelise.
Add vinegar and season to taste with salt and pepper. Cook until mixture thickens.
Serve chilled or at room temperature, with goat’s milk cheese phyllo parcels, roast or smoked meat or poultry and strong-flavoured cheeses.

Makes about 500 ml
