3.00 large onions — thinly sliced into rings
100.00 g butter — unsalted
30.00 ml raisins — seedless
65.00 ml brown sugar
125.00 ml vinegar — apple or grape
15.00 ml yellow mustard seeds
1.00 fresh ginger — grated

Method:

Heat a deep, medium-sized heavy-based saucepan over moderate heat.
Sauté the onions in the butter until they are glossy and soft and the moisture from the butter has evaporated. Stir continuously.
Add the raisins, sugar and vinegar, taking care because it may spatter.
Boil rapidly until the mixture thickens and no longer sticks to the bottom of the pan.
Add the mustard seeds and ginger, and season with salt and freshly ground black pepper.
Cool and serve.
