Onion and Brie tartlets

    olive oil
  • 4
    onions, cut into thin rings
  • 100
    balsamic vinegar
  • 5
    dried thyme
  • 4
    readymade tartlet cases
  • 80
    Brie cheese, sliced
  • rocket leaves to serve


Heat olive oil in a large frying pan. Gently fry onions until softened. Add vinegar and thyme and simmer for 15 minutes. Divide onion mixture among pastry cases and top each with a slice of cheese. Place under a preheated grill and grill until melted. Top with rocket leaves and serve.
